This grilled smoked chicken sandwich with roasted red peppers, mozzarella cheese and pepper pesto will become your favourite sandwich recipe of all time! The chicken is smoked first then piled high with tons of flavourful ingredients.
Grilled Smoked Chicken Sandwich with Roasted Red Peppers, Mozzarella, and Red and Yellow Pepper Pesto
I love a good sandwich. I mean LOVE. Like stalker kind of love. This grilled chicken sandwich is one I fall in love with all over again every time I make it. It has so many layers of deliciousness. Also, I made fire roasted yellow and red pepper pesto. In addition, I made a gorgeous homemade Smoked Chicken. Then, I combined those things to make this over the top grilled sandwich. It’s so good you may want to hug me. But don’t. Kim does not like PDA. Seriously, don’t try it.
What you can try is this sandwich. Seriously, it is so worth the effort. If you have smoked chicken it works beautifully in this recipe. But if you don’t and just want to slap any old chicken on here that’s okay too. Well, maybe not an old chicken. In fact, make sure it’s fresh. To clarify, I don’t want you taking me literally and going to the butcher to ask for an “old chicken”. How embarrassing would that be!
Besides smoked chicken, you could also use Brick Chicken in this recipe. If you’re just in a serious lazy mood you can even buy a rotisserie chicken and use that. Whatever floats your boat, man. Pick your battles in life. Chicken ain’t one of them. Ain’t no one got time for that.
To sum up, pick your chicken, make your Fire Roasted Yellow and Red Pepper Pesto and get to stepping. Out on your deck that is. Or you patio. Whatever. Just get to stepping wherever your grill is. Then grill this mother. Grill it, eat it, thank me after your third or fourth one. You know, whenever you stop for air. I’m in no rush. I can’t wait.

- Pesto

Personally, I would recommend making the Fire Roasted Yellow and Red Pepper Pesto though. I mean, just look at it.
Totally worth the effort. I’ve already had one (okay, so I had three) and I still want to sink my teeth into another one. Just one bite. One little bite.
Now go forth and make sandwiches. Seriously, NOW! Then share one with a friend. We’re friends, right? I like mine piled extra high.

Smoked Grilled Chicken Sandwich
Ingredients
- 1 whole baguette
- 1 whole cooked whole chicken sliced into pieces
- 1 cup roasted red peppers jarred or homemade
- 2 cups mozzarella cheese sliced or grated
- 1 batch fire roasted yellow and red pepper pesto (recipe can be found on my blog)
Instructions
- Heat your chicken pieces up on the grill. Use a cookie sheet if the pieces are small.
- Now use garlic butter and spread that stuff liberally all over the baguette. Pop the spread side of the baguette down and grill until golden, about 3 minutes.
- Now take that baguette off the grill.
- Pop a cookie sheet or pizza stone on the grill.
- Place the bottom of the baguette bottom side down on the cookie sheet. Start piling on the chicken and layer it with roasted red peppers, cheese and pesto. However you want to layer it is fine by me. Just go nuts and pile that sucker high.
- Put the top of the baguette on, well, the top obviously.
- Put the lid of the grill down and let that sucker heat up until the cheese melts. It will take a few minutes. Do not have your grill too hot or you will scorch the bread. If you're concerned it's too close to the grates use bricks to lift the cookie sheet up off the grill grates a little bit.
- Pull it off the grill and slap more pesto on it.
- You can make your own favourite pesto, or make my Fire Roasted Yellow and Red Pepper Pesto
- Serve with a big old sandwich loving smile!

Ha, I leave mine out year round. I may move my grills and smoker to the patio since it’s blocked on all sides from wind, then I could set the smoker on a wheeled cart and wheel it in and out of the garage. I’m a nut right.
